Pork Souvlaki Skewers

Instructions

  • 1.   Skewers:
    1- In a glass dish or in a large resealable bag, mix the oil, lemon juice, garlic, and spices. Add the cubed meat and coat well. Cover the dish or close the bag. Refrigerate for 12 to 24 hours.
  • 2.   Sauce:
    1- Seed and grate the cucumber, then squeeze out excess moisture.
  • 3.   2- In a bowl, mix the remaining 6 ingredients. Season with salt and pepper.
  • 4.   Cooking:
    1- Preheat the barbecue to high heat. Oil the grill.
  • 5.   2- Thread the meat onto each skewer. Season with salt and pepper. Grill the skewers for about 2 minutes on each side or until cooked to medium.

  • ¼ cup of lemon juice
  • 2 garlic cloves
  • 1 tablespoon of dried oregano
  • ¼ teaspoon of Cayenne pepper
  • 1.5 of pork tenderloin
  • 6 skewer sticks
  • 1 cup of Greek yogurt
  • ½ cup of cucumber
  • 1 green onion
  • 1 garlic clove
  • 1 tablespoon of sweet relish
  • 1 pinch of salt and pepper
