1. Cook red lentils and set aside (add potatoes, carrots if needed)
2. Cook onions in a little oil
3. Add spices (amount according to taste): paprika, turmeric, cumin, chili, coriander
4. Once the onions are cooked, add:
- Tomatoes (canned or tomato puree)
- Garlic
- Ginger
5. Cook for a little while until the tomato puree thickens slightly
6. Add:
- Lentils
- Coconut milk
- Lime
- Salt, pepper
7. Let it simmer and stir occasionally <= important, it can easily burn at the bottom)
8. Serve with fresh coriander if available
9. The longer it simmers on low heat, the better it gets!
