Basic Dhal

Instructions

  • 1.   Cook red lentils and set aside (add potatoes, carrots if needed)
  • 2.   Cook onions in a little oil
  • 3.   Add spices (amount according to taste): paprika, turmeric, cumin, chili, coriander
  • 4.   Once the onions are cooked, add:
    - Tomatoes (canned or tomato puree)
    - Garlic
    - Ginger
  • 5.   Cook for a little while until the tomato puree thickens slightly
  • 6.   Add:
    - Lentils
    - Coconut milk
    - Lime
    - Salt, pepper
  • 7.   Let it simmer and stir occasionally <= important, it can easily burn at the bottom)
  • 8.   Serve with fresh coriander if available
  • 9.   The longer it simmers on low heat, the better it gets!

Notes & Suggestions

  • - Cooking the onions becomes difficult once lentils/tomatoes are added.

    - Dhal is a strange fluid. Once it is homogeneous and mixed, the cooking process causes the water to rise to the surface and allows the bottom to burn. Sometimes it splatters, so it's best to cover it.

    - Raisins can be added for a touch of sweetness.

    - It is possible to add cooked green beans, potatoes, or carrots.

  • 250 g of red lentil
  • 2 onions
  • 4 tablespoon of ground cumin
  • 4 tablespoon of turmeric powder
  • 4 tablespoon of smoked paprika
  • 3 tablespoon of olive oil
  • 400 g of diced tomato
  • 4 garlic cloves
  • 1 medium fresh ginger
  • 200 ml of coconut milk
  • ½ limes
  • 4 stalk of fresh coriander
  • salt (according to taste)
  • pepper (according to taste)
