Beef fillet in pastry crust

The puff pastry that encases the meat has the particularity of trapping the flavors inside its crispy crust.

Instructions

  • 1.   Brown the fillet in a casserole dish with oil and butter, a few minutes on each side.
  • 2.   Then place the fillet on a rack, remove the string and let it drain and cool completely (about 1 hour).
  • 3.   Preheat the oven to 240°C (464°F).
  • 4.   In a bowl, mix the egg yolk with the milk. Roll out the pastry on a floured surface and brush it with the egg yolk.
  • 5.   Place the fillet in the middle, fold the edges to make a nice package, pressing firmly on the folds to seal them. Brush it with egg yolk as well.
  • 6.   Before baking it, don't forget to make a vent in the middle and let it cook for about 35 minutes.
  • 7.   When the crust is golden, turn off the oven and let the fillet rest for about 5 minutes with the oven door open.

  • 750 g of puff pastry
  • 1 egg yolk
  • 2 tablespoon of milk
  • 1 handful of flour
  • 25 g of butter
  • 3 tablespoon of olive oil
  • 1 pinch of salt and pepper
