Cantonese Fried Rice

Instructions

  • 1.   Cook the rice.
  • 2.   Meanwhile, sauté the chopped onions in hot oil.
    Add the shrimp and peas. Season with salt and pepper, mix well. Cover and cook for about 12 minutes over low heat.
  • 3.   Meanwhile, lightly beat the egg(s) and cook them in a pre-oiled pan, stirring until fully cooked.
  • 4.   Add the scrambled eggs to the previous mixture. Mix well. Sprinkle with chopped chives.
    Add the cooked and drained rice, and let it fry for a bit.
  • 5.   Garnish with sprigs of parsley.
