Wraps (crepes)

Instructions

  • 1.   Start by mixing the flour and salt, then add the olive oil and mix everything together.
  • 2.   Gradually incorporate the water and knead until you obtain a dough ball (if using a mixer, the dough should come off the sides).
  • 3.   Form 8 small balls of equal size and let them rise for about 30 minutes, covered with a damp cloth.
  • 4.   Roll out the balls into very thin pancakes (this is where the difficulty lies, the pancakes should be extremely thin).
  • 5.   Heat a pan over high heat and cook the pancakes for 30 seconds on each side (usually, after the second pancake, 20 seconds per side is enough).
  • 6.   Let them cool and fill them with the filling of your choice. Roll up the pancake and cut the ends at an angle.
