Instructions
1. Sauté the roughly chopped onion in a saucepan. (Add garlic and/or ginger, but not too much... otherwise their taste could be distracting).
Add sliced or cubed carrots.
Add balsamic vinegar and bay leaf.
2. For dry lentils:
Rinse the lentils and add them to the onions/carrots, then cover with water and bring to a boil.
Cook over low heat until the lentils are tender. (The liquid should have been absorbed)
For canned lentils:
Cover the carrots/onions with a little water and bring to a boil.
Cook over low heat until the carrots are tender (the liquid should have been absorbed).
Add the canned lentils and let them warm up for a few minutes over low heat.
3. Add the sausages (sliced, they will further flavor the dish), season with salt and pepper. Let them warm up for a few minutes over low heat.
Serve with a salad (such as cabbage).
