Quinoa and Red Cabbage Salad

Instructions

  • 1.   Rinse the quinoa with cold water and drain.
    Pour the quinoa into a saucepan with twice its volume of water, bring to a boil and let cook for 10 minutes.
    Remove the quinoa from the heat, drain it and let it rest for 10 minutes.
  • 2.   Prepare the dressing in a salad bowl by mixing all the ingredients and add 1 tablespoon of water if the mixture is too thick, then add the quinoa.
  • 3.   Add the vegetables and the previously washed coriander: grate the carrot, slice the coriander, cabbage, and spring onion, then add them to the rest of the previous mixture.
    Add the lemon juice and cashews, mix everything together.

  • 1 tablespoon of lemon juice
  • ½ carrots
  • 25 g of fresh coriander
  • 25 g of cashew nut
  • 30 g of green onion
  • 70 g of red cabbage
  • 30 g of quinoa
  • Vinaigrette :
  • 2 teaspoon of soy sauce
  • 1 teaspoon of wine vinegar
  • ½ teaspoon of honey
  • 1 teaspoon of olive oil
