Healthy Almond Cake with Mirabelles

Instructions

. Preheat the oven to 200°C (400°F).

. Place a 24 cm (9 inch) silicone mold or a greased mold of the same size on a baking sheet and spread the mirabelles on the bottom.

. In a bowl, crack the eggs.
Add the sugar and whisk vigorously to dissolve the sugar.

. Add the almond powder, cornstarch, and oil.
Mix everything together.

. Pour the mixture over the mirabelles.
Bake in the preheated oven for 15 minutes or until the top is lightly golden.
Notes & Suggestions
This dessert can be served cold or warm.
If mirabelles are not in season, you can use frozen ones or even ones in syrup.
