Healthy Almond Cake with Mirabelles

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Place a 24 cm (9 inch) silicone mold or a greased mold of the same size on a baking sheet and spread the mirabelles on the bottom.
  • 3.   In a bowl, crack the eggs.
    Add the sugar and whisk vigorously to dissolve the sugar.
  • 4.   Add the almond powder, cornstarch, and oil.
    Mix everything together.
  • 5.   Pour the mixture over the mirabelles.
    Bake in the preheated oven for 15 minutes or until the top is lightly golden.

Notes & Suggestions

  • This dessert can be served cold or warm.
    If mirabelles are not in season, you can use frozen ones or even ones in syrup.

  • 300 g of pitted mirabelle plums
  • 45 g of cane sugar
  • 60 g of almond powder
  • 2 eggs
  • 20 g of cornstarch
  • 1 tablespoon of sunflower oil
