Chocolate Banana Cake

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Mix the flour, baking powder, and vanilla sugar.
  • 3.   Add the mashed ripe bananas and mix well. (+ vanilla extract, almond extract, 20g of almond butter...)
  • 4.   Break the dark chocolate into large chunks (that's the secret) and add to the mixture.
  • 5.   Add the eggs one at a time. Mix well.
  • 6.   Pour into a loaf pan lined with parchment paper. (You can decorate by placing banana slices on top. They will caramelize!)
  • 7.   Bake for 45-55 minutes at 180°C (350°F). (Cover with aluminum foil around 40 minutes if it browns too much)
    The cake should come out golden brown.
    Let it cool before cutting and enjoying.

Notes & Suggestions

  • You can replace the vanilla sugar with 50g of brown sugar!
    Or replace half of the flour with almond powder for more flavor!
    Or... For a decadent version... You can add 130g of melted butter (reduce the chocolate by 2/3 in this case!)
  • The riper the bananas, the sweeter they will be!

  • 150 g of 70% dark chocolate
