Instructions

  • 1.   Chop the onion, garlic, and shallot.
    Peel and finely dice the carrot.
    Peel the potatoes and cut them into small pieces.
  • 2.   Cook the potatoes in salted water or milk (be careful to watch as the milk may overflow when boiling) for about 30 minutes.
  • 3.   Sauté the carrots in butter for 1 minute, then add the onion, garlic, and shallot. Let it cook for another 1 minute.
  • 4.   Add the meat. Season with salt and pepper and cook for 10 minutes, stirring occasionally.
  • 5.   Pass the potatoes through a vegetable mill or a potato masher and add butter, milk, cream, and salt. Mix quickly.
  • 6.   Arrange the meat in a gratin dish and cover with the mashed potatoes. Finish with the cheese.
    Bake in a very hot oven for 10 minutes and then broil for 2 minutes.
