+ ♨️ Butter and Parsley Salsify

The best recipes are often the simplest... Three basic ingredients are enough to enhance salsify! Melted butter, lemon zest, and fresh parsley will bring out their subtle flavors.

Instructions

  • 1.   Wash and zest the lemon. Set it aside. Soak the salsify in cold water and brush them to remove any dirt. Rinse them in clean water, cut off the tuft, and peel them.
  • 2.   Cut them into pieces and immerse them in a container of cold water with the juice of the squeezed lemon to prevent them from turning black.
  • 3.   Then, place them in a saucepan and cook them in boiling salted water for 20 minutes. Drain them well.
  • 4.   Melt the butter over low heat in a small saucepan. Remove the white parts with a slotted spoon, then add the lemon zest. Wash and chop the parsley.
  • 5.   Heat the melted butter in a large saucepan. Add the salsify, parsley, salt, and pepper. Mix well for 2 to 3 minutes and serve hot.

  • Ideal accompaniment for meat, poultry, or fish dishes.
