Beetroot Mousse

Beetroot is a classic appetizer, but how about preparing it in the form of a mousse for a change? With its purple color, beetroot mousse allows you to create beautiful verrines that will be a hit at a cocktail party or summer meal.

Instructions

  • 1.   Blend the 2 beetroots without the juice (but keep it aside in case you find the mixture too thick).
  • 2.   Add the half clove of garlic, finely chopped, then the heavy cream and the slice of white bread. Blend until you obtain a semi-thick texture. Add the juice at this point if your mousse is too thick.
  • 3.   Serve in verrines, accompanied by a few shrimp. Serve very chilled.

  • 3 tablespoon of thick sour cream
  • salt (according to taste)
