Zucchini and Goat Cheese Pancakes with Pine Nuts

Instructions

  • 1.   Wash and dry the zucchini. Grate them using a grater with large holes. Season with salt and let them drain in a colander for about fifteen minutes.
  • 2.   Grate the Ossau Iraty cheese. Toast the pine nuts in a dry skillet for a few minutes.
  • 3.   In a bowl, beat the egg and then add the fresh goat cheese. Mix well and then add the cornstarch. Beat vigorously. Squeeze the zucchini to remove excess water. Add the grated Ossau Iraty cheese, pine nuts, and grated zucchini to the mixture. No need to add salt as the cheeses are already salty.
  • 4.   Let the mixture rest for about fifteen minutes.
  • 5.   Heat a skillet with a little bit of fat. Take a tablespoon of the mixture and place it in the skillet, spreading it out. Cook over medium heat for 4 to 5 minutes on each side.
