Cod Minestrone

Instructions

  • 1.   Wash and peel the vegetables, then cut them into small dice.
    Rinse the cod with water and pat it dry with paper towels. Cut it into large strips.
  • 2.   Heat the olive oil in a large pot, add the onion and let it brown, then add the vegetables. Cook for 5 minutes.
  • 3.   Add the water and vegetable broth, then let it cook for 10 minutes over medium heat. Stir in the peas and let it simmer for another 5 minutes.
    Finally, place the cod in the pot for a short moment, then let it rest off the heat for 5 minutes. Make sure the cod is completely submerged in the broth.
  • 4.   Season with salt and pepper. Serve hot.

  • 300 ml of water
