Beef Tataki, Passion Fruit and Whole Grain Mustard Vinaigrette, Pan-Seared Baby Gem Lettuce with Sesame

Instructions

  • 1.   In a stainless steel pan, quickly grill the rumsteak slices on each side and season with a pinch of fine salt.
  • 2.   Open the passion fruits, mix the pulp with whole grain mustard, olive oil, sesame oil, and soy sauce.
  • 3.   Slice the radishes thinly using a mandoline.
  • 4.   Cut the baby gem lettuce hearts in half lengthwise.
  • 5.   Sear them in a hot pan with a drizzle of olive oil on each side.
  • 6.   Brush the flat side with maple syrup and sprinkle with sesame seeds.
  • 7.   Slice the rumsteak into thin slices.
  • 8.   Place the rumsteak on a flat plate and generously garnish with the vinaigrette.
  • 9.   Place the two baby gem lettuce hearts next to it and finish with coriander leaves and radish shavings.
