Instructions

  • 1.   Wash the peppers, remove the seeds, and cut them into large cubes. Peel the carrots and slice them into rounds. Heat the oil in a large skillet over medium heat. Add the pepper cubes and carrot slices and cook for about 5 minutes. Sprinkle with sugar and let it caramelize, stirring occasionally. Drizzle with vinegar. Season with salt and pepper.
  • 2.   Wash, dry, and finely chop the basil. Let the vegetables cool for about 5 minutes and then mix in the basil. Serve the carrot and pepper salad.
