Baked Potatoes with Sautéed Mushrooms

Instructions

  • 1.   Wash the potato and pre-cook it with the skin on for about 20 minutes in salted water. Preheat the oven to 200°C (gas mark 3, convection oven: 180°C). Drain the potato, wrap it in aluminum foil, and place it on a baking sheet. Bake in the middle of the oven for about 20 minutes.
  • 2.   Cut the mushrooms into quarters and the spring onion into slices. Heat the oil in a pan and sauté the mushrooms. Add the spring onion, sauté briefly. Season with salt, pepper, and add the thyme.
  • 3.   Cut the radishes (or replace with shallots, etc.) into cubes and mix them with skyr, chives, and parsley. Season with salt and pepper.
  • 4.   Remove the potato from the oven and make incisions. Mash the inside of the potato with a fork and mix in some sauce. Add the mushrooms and serve with the remaining sauce.
