Pan-fried black pudding with apples

Black pudding with apples is a classic dish! Pan-frying gives it a soft texture. For a quick recipe, you can also bake it in the oven.

Instructions

  • 1.   Peel the apples and cut them into quarters.
  • 2.   Dip the quarters in lemon juice and set aside the juice, which you will sweeten with sugar.
  • 3.   Cut the quarters in half again.
  • 4.   Sauté the quarters in 15g of butter and cover the pan (to prevent them from drying out and sticking).
  • 5.   Let them brown and turn them over frequently.
  • 6.   When the quarters start to dry out (the apples will finish cooking and caramelize!).
  • 7.   Flip the apples to get a layer on both sides and let them cook for a few more minutes.
  • 8.   Keep warm.
  • 9.   Meanwhile, in another pan, sauté your 2 pieces of black pudding in the remaining butter.
  • 10.   Sear it (high heat), but be careful with the rest of the cooking, which should remain gentle to avoid breaking the casing.
  • 11.   Cook the black pudding on all sides.
  • 12.   When the casing has shrunk (at the ends) and the surface is black, serve the black pudding with the apples.
