1. Wash and cut the carrots and zucchini into tagliatelle-like strips.
2. Blanch the carrots in salted boiling water for about 8 minutes.
3. In a sauté pan, add 1 tbsp of olive oil and cook the zucchini for about 10 minutes.
4. Then add the carrots. Season with salt and pepper. Add cumin and 1 tbsp of coriander.
5. Set aside.
6. Slice the onion, peel the tomatoes and cut them into small cubes.
7. In a frying pan, add 1 tbsp of olive oil and sauté the 1/2 onion.
8. Add the tomatoes.
9. Cook for about 6-8 minutes. Add the cream, then season with salt, pepper, and curry. Mix well.
10. In a microwave-safe dish, place the cod fillets, season with salt and pepper, drizzle with 1 tbsp of olive oil, and sprinkle the remaining coriander.
11. Cook in the microwave for 3.30 minutes.
12. Arrange on plates by first placing a bed of zucchini and carrot tagliatelle, then the curry sauce, and finally the fish.
13. You can also cook rice and pour the sauce over the rice.
