Instructions

  • 1.   To ensure that the veal roast is both tender and nicely browned, start by heating olive oil in a casserole dish or pot, then add the meat; brown it on all sides and set it aside on a plate. Peel the onion, slice it thinly, then sauté it in the casserole dish for 2 to 3 minutes.
  • 2.   Place the roast back on top of this aromatic garnish, then pour in the water, season with salt and pepper, and add the bay leaf and thyme.
  • 3.   All that's left is to cover the casserole dish and let the roast cook, or more precisely simmer, for about 45 minutes over low heat. To check if your veal is tender enough, poke it with a fork or knife blade: no more pink juice should come out.
  • 4.   Let the meat rest for a few minutes before serving, then place a nice slice or two on each plate, and serve with sautéed potatoes or fresh tagliatelle pasta, and a generous spoonful of mustard.
