. Unroll the pastry in a tart pan, prick it with a fork, and pre-bake for 15 minutes at 180°C (350°F).

. Heat the milk until warm. In a bowl, mix together the flour, sugar, almonds, and eggs. Gradually whisk in the warm milk and return to low heat.

. Cook the cream while stirring constantly. Remove from heat when the cream has thickened.

. Peel the peaches and cut them into 8 slices.

. Fill the tart shell with the pastry cream and arrange the peach slices on top.

. Bake for 30 minutes at 180°C (350°F).
