Cherry Tomato Ramekins

Instructions

  • 1.   Dip the cherry tomatoes in a large pot of boiling water for 15 seconds.
  • 2.   Refresh them in a basin of cold water, then remove their skin.
  • 3.   Divide the tomatoes into 6 ramekins.
  • 4.   Sprinkle each one with half a teaspoon of powdered sugar, then mix.
  • 5.   Add a heaping tablespoon of fresh cream, salt, and pepper to each ramekin, then bake in a hot oven (375°F) for 20 minutes.
  • 6.   Remove the ramekins from the oven and sprinkle them with freshly chopped basil before serving hot.
