Teriyaki Chicken

Teriyaki chicken is a Japanese specialty that involves marinating the meat in a slightly sweet sauce made from soy sauce and sake (or mirin). The chicken, soaked and glazed, is incredibly tender and flavorful. A delight!

Instructions

  • 1.   Cut the chicken into pieces. Set aside.
  • 2.   Mix ginger juice with soy sauce, Japanese vinegar, sake, and sugar in a large bowl.
  • 3.   Add the chicken pieces to the mixture, cover with plastic wrap (or use an airtight lid if the bowl has one), and let them marinate in the refrigerator for 20 minutes.
  • 4.   After this time, drain the chicken, reserving the marinade.
  • 5.   Heat some oil in a wok and brown the chicken pieces over high heat.
  • 6.   Brush the chicken pieces with the reserved marinade.
  • 7.   Simmer until the sauce becomes syrupy.
  • 8.   Serve your teriyaki chicken with white rice.
