Instructions

  • 1.   Peel and finely chop the shallot. Sauté it with a knob of butter over low heat in a small saucepan for 5 minutes. Add the vinegar and let it reduce over low heat. Season with salt and pepper. Add the cottage cheese, off the heat, while whisking. Wash and dry the tarragon. Take the leaves and finely chop them into the sauce. Serve immediately.
