Instructions

  • 1.   Preheat your oven to 350°F (180°C). In a bowl, prepare the dough. Add the cornstarch, flour, brown sugar, and salt. Mix well, then add an egg and a little water to obtain a smooth dough. Form a ball, then roll out the dough between two sheets of parchment paper using a rolling pin. Place the pie crust in a tart pan, then prick the bottom of the tart with a fork. Place uncooked lentils on the bottom of the tart and bake for 5 minutes at 350°F (180°C). Let it cool.
  • 2.   Prepare the lemon cream. Wash and grate the lemon zest. Cut the lemons in half. Squeeze the lemon juice. Separate the egg yolks from the egg whites. In a bowl, mix the egg yolks with the sweetener and cornstarch. Then add the lemon juice, zest, and cottage cheese. Mix everything well. Beat the egg whites until stiff peaks form, then gently fold them into the mixture.
  • 3.   Fill the pre-baked tart crust with the cottage cheese and lemon mixture. Bake at 350°F (180°C) for about 20 minutes. Let it cool for 10 minutes before serving.
