Chicken Tajine with Preserved Lemon & Olives

Instructions

  • 1.   In a tajine or a pot, add the olive oil and finely grated onion. Let it melt slightly, then add the washed and drained chicken pieces, saffron, ginger, and turmeric.
    Sauté for 5 minutes over medium heat, turning the chicken regularly. Add the chopped garlic cloves, finely chopped herbs, salt, pepper, and pour boiling water until it covers the ingredients.
    Cover and let it cook for about 40 minutes.
  • 2.   Remove the chicken from the pot, add the olives and briefly rinse the lemon quarters under water to remove excess salt. Let it simmer uncovered for 10 to 15 minutes to reduce the sauce.
    Put the chicken in the oven to brown, brushing it with a little butter.
    In the serving dish, arrange the chicken pieces, add the olives and preserved lemon quarters, then pour the sauce over them.
