1. In a tajine or a pot, add the olive oil and finely grated onion. Let it melt slightly, then add the washed and drained chicken pieces, saffron, ginger, and turmeric.
Sauté for 5 minutes over medium heat, turning the chicken regularly. Add the chopped garlic cloves, finely chopped herbs, salt, pepper, and pour boiling water until it covers the ingredients.
Cover and let it cook for about 40 minutes.
