2. Finely chop the onions. Put everything in a bowl and add the eggs. Mix. Salt, pepper. Mix.
3. Heat a little olive oil in a pan. Using a wooden spoon, place a spoonful of the mixture in the pan. Then spread the pancake very flat to cook it well.
4. Repeat the process as many times as necessary depending on the size of your pan and the size of the pancakes you desire: you can make them very small or one very large one covering the entire pan.
5. Flip the pancakes halfway through cooking.
6. The pancake is well cooked when it has browned and is crispy on both sides, but soft on the inside.
