Creamy Corn Dip

Makes a quick dip for parties, but can also be served with a dinner alongside tacos or quesadillas. Mixing the dip couldn't be simpler: no blender or stove required. Instead, you'll combine all the ingredients in a bowl, then heat it in the microwave until the cheese is melted and bubbly. Diced pimientos are mild in flavor and add a sweet pepper taste to the dip, but if you prefer spicier appetizers, try using diced jalapenos instead.

Instructions

  • 1.   Chop the shallots.
  • 2.   Mix the corn, Monterey Jack, mayonnaise, and diced pepper in a medium-sized microwave-safe bowl.
  • 3.   Microwave on MEDIUM power (50%) and stir every minute and a half until the cheese is melted and the dip is hot, about 5 minutes.
  • 4.   Garnish with shallots.
