Peaches in syrup

In Italy, it's a classic. Typically, a particular variety of peaches is used, typical of Campania; percoche (between a peach and an apricot). They are characterized by firm, yellow flesh, slightly less juicy than other peach varieties or nectarines but very flavorful. The advantage in this case is that they hold up well when cooked and do not fall apart.

Instructions

  • 1.   Poach the peaches for 1 minute in boiling water, then carefully drain and remove the skin. Cut them in half and remove the pit.
  • 2.   Meanwhile, bring 80 cl of water to a boil with the sugar and vanilla pulp so that the sugar dissolves and a sort of syrup forms (it will take 5 to 10 minutes). Reduce the heat and immerse the peaches in the syrup for 4 minutes, then turn off the heat and let the peaches sit for a few more minutes. They should remain whole but absorb the syrup well.
    Carefully drain them with a slotted spoon, place them in a bowl, cover with a little syrup and plastic wrap.
  • 3.   Use within the day or cover and refrigerate until the next day.

Notes & Suggestions

  • Preservation: in this case, sterilize the jar and lid first by washing them in boiling water and drying them thoroughly (or in the oven at 130°C for 10 minutes). Once the peaches are removed from the syrup, cook the syrup a little longer (5 minutes) with the juice of a lemon to make it thicker. Place the peaches in the warm, clean jar and pour the syrup over them. Seal tightly and invert.
    Then sterilize in a large pot (or pressure cooker) by placing the jar in the bottom surrounded by a towel (to prevent it from hitting the sides). Pour hot water over it. Bring to a boil for at least 30 minutes. Let cool in the water, then remove. Wipe and store the jar.
