Grilled Vegetable Salad

A sunny salad with grilled sun vegetables, basil, and olives. Served very cold, this dish can be served as an appetizer or as a side dish with grilled meats. For this recipe, I used an organic extra virgin olive oil from Provence.

Instructions

  • 1.   Preheat the oven to 220°C on the broil setting. Wash all the vegetables.
  • 2.   Cut the peppers in half lengthwise and place them on a baking sheet (skin side up). Broil them until the skin is blackened (about 15 minutes). Remove them from the oven and place them in a freezer bag to cool.
  • 3.   Meanwhile, slice the zucchini and eggplant into thin slices using a mandoline. Lightly brush the zucchini and eggplant slices with olive oil. Arrange them on non-stick baking sheets and broil for a few minutes, flipping halfway through cooking (about 5 minutes on each side).
  • 4.   Slice the onions into rounds, place them on a baking sheet, and quickly brush them with oil. Broil them (about 10 minutes).
  • 5.   Peel the cooled peppers and cut them into strips.
  • 6.   Put all the vegetables in a salad bowl, add the chopped basil, the dried tomatoes cut into pieces, and the olives sliced into rounds. Season with salt and add a drizzle of balsamic vinegar.
  • 7.   Refrigerate overnight (essential because the vegetables need to rest to release their juices and flavors!).
  • 8.   The next day, adjust the seasoning if necessary. Serve very cold.

  • 1 eggplant
  • 2 zucchinis
  • 2 red bell peppers
  • 1 onion
  • 6 dried tomatoes
  • 1 handful of pitted black olive
  • 1 stalk of fresh basil
  • 2 tablespoon of olive oil
  • 2 tablespoon of balsamic vinegar
  • 1 pinch of flower of salt
