Chicken Tajine with Preserved Lemon, Fennel, and Eggplant

A simple chicken tajine!

Instructions

  • 1.   Cut the chicken thighs in half. Season the thighs with salt and lightly brown them in olive oil.
  • 2.   Add the sliced onion and fennel. Add the cubed eggplant. Add the preserved lemon and garlic. Add the tajine spices. Season.
  • 3.   Add a little water and cook covered for 1 hour. Add the olives and cook for an additional 20 minutes. Serve immediately!

Notes & Suggestions

  • Chef Damien's tips: - You can add a small cinnamon stick if you like! - Serve this dish with couscous or some steamed potatoes!

  • 1 onion
