Dry Chickpea Falafels

This is the first time I've tried making falafels and I must say I was surprised by how simple the recipe is. So here's the recipe using dry chickpeas. The most complicated part is soaking the chickpeas for 24 hours...

Instructions

  • 1.   Soak the chickpeas in cold water for 24 hours, changing the water occasionally.
  • 2.   Blend the chickpeas and add garlic, onion, parsley, and coriander. Season the mixture. Add the spices.
  • 3.   Shape the falafels into balls and flatten them slightly. Cook the falafels in deep frying or in a pan with a generous drizzle of olive oil.
  • 4.   Serve in a pita bread or a wrap accompanied by a yogurt sauce, for example.

Notes & Suggestions

  • Traditionally served in a pita bread with a finely chopped salad (tomato, cucumber, green onions, herbs, olive sauce, lemon), hummus, tahini, and fried eggplants, but feel free to enjoy them according to your own taste...

  • 4 garlic cloves
  • 2 handful of fresh coriander
  • 1 teaspoon of ground cumin
  • 2 handful of fresh parsley
  • 1 pinch of Espelette pepper
  • 1 glass of frying oil
