Thai-style Chicken Pad Thai

After the delicious recipe for green curry chicken, Thai chef Lek came to prepare a Pad Thai with me, the well-known Thai-style stir-fried noodle dish. This dish is prepared quickly and enjoyed immediately, it's a spectacle and a feast! You can choose to replace the tofu or complement it with slices of chicken, pork, or shrimp. Instructions

  • 1.   Soak the noodles in hot water to soften them.
  • 2.   Dissolve a ball of tamarind paste in 100 ml of hot water, mix and strain the mixture to obtain tamarind juice.
  • 3.   Cut the chicken thighs into small pieces, removing the bones, then set aside. Do the same with the shallot and spring onion, cutting them into 2 cm sticks.
  • 4.   Heat oil in a wok and stir-fry the chicken until golden, then set aside.
  • 5.   Stir-fry the shallots with the tamarind juice, brown sugar, and fish sauce, then mix and let the mixture thicken like caramel for about 3 minutes.
  • 6.   Add the drained noodles and let them cook with the sauce, adding a little water if necessary if the noodles absorb everything.
  • 7.   Crack 2 eggs into the wok next to the noodles and cook them sunny-side up, then mix them with the noodles to keep beautiful pieces of white and yellow.
  • 8.   Add the chicken and peanuts.
  • 9.   Off the heat, add the bean sprouts and spring onion to keep them crunchy, then mix and serve with a wedge of lemon.

  • 2 green onions
  • 2 tablespoon of peanut
  • 2 tablespoon of brown sugar
  • 2 chicken thighs
  • 2 tablespoon of sunflower oil
  • 1 tablespoon of sour tamarind paste (optional)
  • 1 handful of soybean sprout
  • 2 shallots
  • 2 eggs
  • 1 lemon
  • 150 g of rice noodle
  • 1 tablespoon of fish sauce
  • salt (according to taste)
