Kit Kat and Smarties Birthday Cake

You have probably already come across or even tasted one of these beautiful Kit Kat birthday cakes. Delicious and chocolatey, this dessert is a real treat for both the taste buds and the eyes. Instructions

  • 1.   Separate the egg whites from the yolks. In a bowl, whisk the egg yolks with the granulated sugar until the mixture whitens. Add the softened butter and mix well to obtain a homogeneous batter. Add the almond powder. Mix.
  • 2.   Melt the chocolate in the microwave or in a double boiler. Stir to obtain a homogeneous mixture. Add the melted chocolate to the preparation. Incorporate the sifted flour and baking powder while stirring to avoid lumps. Add the heavy cream and cocoa powder. Mix well.
  • 3.   Beat the egg whites until stiff peaks form using an electric mixer. Gently fold them into the preparation using a spatula. Divide the cake batter into 2 lightly greased round pans of the same size. Bake the cakes for 30 minutes (preheated oven at 180°C). Check the doneness with a knife blade: it should come out clean and dry. Unmold the cakes onto a cooling rack and let them cool.
  • 4.   Prepare the dark chocolate ganache. To do this, crush the dark chocolate and place it in a saucepan. Melt it in a double boiler. Meanwhile, whisk the softened butter in a bowl. Add the mascarpone and powdered sugar. Mix well. Finally, add the melted dark chocolate and mix gently.
  • 5.   Place one cake in a presentation dish. Cover its entire surface with the chocolate ganache. Place the second cake on top. Cover the entire cake with chocolate ganache.
  • 6.   Separate the Kit Kat bars and arrange them all around the cake. Wrap a ribbon around the cake to hold the Kit Kat bars in place. Cover the top of the cake with Smarties. Chill until ready to serve.

    Chef Christophe's tips: You can choose white chocolate or colored Kit Kats. There are pink, green, yellow, or orange Kit Kats available. Vary the colors and add mini Smarties on top, for example.
