1. Put the pasta (orzo) in a saucepan over high heat and toast them dry until they brown slightly. This will help them stay firm when cooked.
2. Then add the olive oil and cumin. Stir and cook for 1 minute. Cover with water. Bring to a boil, then cover and simmer for 7 minutes (add a little water if needed). Turn off the heat and let it sit covered for an additional 7 minutes. Do not open the lid.
3. Wait for the pasta to cool, then add it to your salad bowl with the halved tomatoes, chopped mint and parsley, red onion, artichoke hearts, and crumbled feta.
4. Season with lemon juice, olive oil, and date honey. Salt and pepper to taste.
Gently mix and serve.
Notes & Suggestions
Do not add too much salt (the feta is already very salty).
If you don't have date syrup, you can use balsamic cream or a little honey.
