Mediterranean Orzo Salad

A surprising, fresh, and delicious salad. You can use small pasta shapes like bullets or pearls, or vary with bulgur.

Instructions

  • 1.   Put the pasta (orzo) in a saucepan over high heat and toast them dry until they brown slightly. This will help them stay firm when cooked.
  • 2.   Then add the olive oil and cumin. Stir and cook for 1 minute. Cover with water. Bring to a boil, then cover and simmer for 7 minutes (add a little water if needed). Turn off the heat and let it sit covered for an additional 7 minutes. Do not open the lid.
  • 3.   Wait for the pasta to cool, then add it to your salad bowl with the halved tomatoes, chopped mint and parsley, red onion, artichoke hearts, and crumbled feta.
  • 4.   Season with lemon juice, olive oil, and date honey. Salt and pepper to taste.
    Gently mix and serve.

Notes & Suggestions

  • Do not add too much salt (the feta is already very salty).
    If you don't have date syrup, you can use balsamic cream or a little honey.

  • 1 tablespoon of olive oil
  • ½ teaspoon of ground cumin
  • 200 g of feta
  • 1 handful of cherry tomato
  • 4 artichoke hearts
  • ½ red onions
  • 1 bunch of parsley
  • 10 stalk of fresh mint
  • Assaisonnement :
  • 2 tablespoon of olive oil
  • ½ lemons
  • 1 teaspoon of date syrup
  • salt (according to taste)
  • pepper (according to taste)
