Chocolate Madeleines

Instructions

  • 1.   Step 1: Beat the eggs with the sugar and vanilla sugar until you obtain a foamy mixture.
  • 2.   Step 2: Add the flour and half a packet of baking powder, then beat again.
  • 3.   Step 3: Melt (separately) the butter and chocolate, then add them to the mixture. Beat one last time to finish the batter.
  • 4.   LET THE BATTER REST IN THE FRIDGE FOR 20 to 30 minutes, PREHEAT YOUR OVEN TO 200°C (392°F) 10 minutes BEFORE BAKING.
  • 5.   Step 4: In your mold, place half a tablespoon of batter in each cavity. (Do not put too much as it will rise in the oven).
  • 6.   Step 5 (final): Bake in the oven for 5 minutes at 220°C (428°F), then lower the temperature to 200°C (392°F) for the remaining 6 minutes.
