Zucchini Flan

Instructions

  • 1.   Wash and slice the zucchini. Cook them in boiling water for about 15 minutes.
  • 2.   Preheat your oven to 180°C (350°F).
  • 3.   Spread the cooked zucchini at the bottom of a gratin dish or a tart pan.
  • 4.   Beat the eggs, add nutmeg, 10 cl (1/2 cup) of heavy cream, salt, pepper, and pour the mixture over the zucchini.
  • 5.   Bake for 25 minutes until the top is lightly golden.

Notes & Suggestions

  • You can also add diced ham or grated gruyère cheese...

    I modified the recipe a bit, replaced the cream with skimmed milk, added 2 tablespoons of cornstarch, and added grated cheese as noted.
