Lentil and Blueberry Salad

Instructions

  • 1.   Cook the lentils in a pot of water for 25 minutes.
    They should remain slightly crunchy.
    Rinse and let cool.
  • 2.   Wash and slice the radishes thinly.
  • 3.   Put all the ingredients in a salad bowl.
  • 4.   Season with oil, vinegar, salt, and pepper.
  • 5.   Serve chilled.

  • 200 g of dry lentil
  • 1 bunch of radish
  • 125 g of blueberry
  • 1 handful of arugula
  • 3 tablespoon of olive oil
  • 2 tablespoon of raspberry vinegar
  • salt (according to taste)
  • pepper (according to taste)
