French Onion Soup

Often considered a food for modest people, due to the abundance of onions and their ease of cultivation, the modern version of this soup came from France in the 17th century, made with stale bread or croutons, beef broth, and caramelized onions.

Instructions

  • 1.   Slice the onions.
  • 2.   In a large pot or cast iron Dutch oven, melt the butter and sweat the onions until lightly browned.
  • 3.   Add the flour and stir with a spatula.
  • 4.   Pour in the broth and bring to a boil. Cook for about fifteen minutes. Season with salt and pepper.
  • 5.   In the bottom of individual gratin dishes:
    1) Place half a slice of stale bread
    2) Sprinkle with some grated cheese
    3) Pour the onion mixture over the bread
    4) Place another half slice of stale bread
    5) Sprinkle with more grated cheese
    6) Finish with another layer of onion mixture
    7) Sprinkle a final layer of grated cheese on top
  • 6.   Place the dishes under a hot broiler until the surface is golden brown. Serve piping hot.

Notes & Suggestions

  • If you don't have stale bread, you can always toast fresh bread.

  • 5 slice of stale bread
  • 1 pinch of salt and pepper
