Spanish omelette | 1 ⭕

The tortilla de patatas is the Spanish equivalent of our French omelette. This thick omelette with potatoes is often enjoyed as tapas in Spanish bars, on a slice of bread, in a sandwich, or simply on its own as an individual portion.

Instructions

  • 1.   Peel the potatoes, cut them into half-round slices about 1 cm thick, and cook them for 5 minutes in boiling water. Then drain and set them aside.
  • 2.   In a large frying pan, heat the oil and add the finely chopped garlic and onion. Let it cook for 2 or 3 minutes.
  • 3.   Add the potatoes. Let them cook for about ten minutes, making sure they don't turn black. Stir occasionally.
  • 4.   Beat the eggs with salt, pepper, and parsley. Add them to the frying pan, cover, and let them cook for about twenty minutes over medium heat.
  • 5.   Transfer the tortilla to a plate. To serve, you can cut it into slices (like a pie) and accompany it with salad, or cut it into pieces and skewer them with toothpicks to serve as an appetizer, just like in Spain!
