Sautéed Swiss Chard with Capers

A refreshing dish where the strong flavors balance out the slightly earthy taste of Swiss chard stems. A simple recipe where the ingredients cook slowly in a pan.

Instructions

  • 1.   Separate the stems and leaves from the Swiss chard.
  • 2.   Peel the white stems, removing the thin film that covers them on both sides, similar to rhubarb. Cut them into pieces, peeling once on one side and once on the other. Place them in a bowl of cold water.
  • 3.   Cook the stems in boiling salted water for about 15 minutes. Once the stems are tender, drain them.
  • 4.   Melt the butter in a skillet and add the stems. Cook over medium heat for 5 minutes. Add the oil, parsley, and capers. Season if necessary and simmer covered for 5 minutes.

  • 20 g of caper
  • 1 tablespoon of olive oil
  • 3 tablespoon of parsley
  • 10 g of unsalted butter
  • salt (according to taste)
  • pepper (according to taste)
