Paleo Cinnamon "Cereal"

Paleo "cereal," that sounds quite contradictory... This recipe only has the name "cereal" in reference to the famous breakfast cereals loved by (big) kids but whose negative effects on health are well known.

Instructions

  • 1.   Preheat the oven to 150°C (300°F).
  • 2.   Place all the ingredients in a large bowl, except for the second egg white.
  • 3.   Mix with a spatula until you obtain a homogeneous dough, not too sticky or too hard. If needed, add the second egg white to adjust the texture.
  • 4.   Place the dough between two sheets of parchment paper and roll it out thinly with a rolling pin.
  • 5.   Bake for 5 minutes to let the dough start to harden, then remove the dish from the oven and cut small squares using a pastry wheel.
  • 6.   Bake again for 10 minutes, then turn off the oven and let the cereal continue to dry and harden inside for about 30 minutes.
  • 7.   Store at room temperature in a glass jar or freeze.

Notes & Suggestions

  • You can add a little apple juice and dried apple pieces.

  • 1 egg white
  • 1 tablespoon of cinnamon
  • salt (according to taste)
