Grilled Vegetable Pasta Salad

Instructions

  • 1.   Preheat the oven to 350°F (180°C for a gas oven and 160°C for a convection oven).
  • 2.   Place the olive oil in a large dish, add the onion, bell pepper, zucchini, and chili pepper. Mix to coat the vegetables with oil. Add the feta cheese in very small pieces. Season and add the thyme.
  • 3.   Roast in the oven for about twenty minutes. Add the artichokes to the other vegetables, then place the cherry tomatoes on top. Cook for an additional 5-8 minutes. Let cool while the pasta cooks.
  • 4.   Cook the pasta until tender. Rinse with cold water and drain well.
  • 5.   Mix the pasta and lemon juice with the vegetables. Season before serving.

  • 1 chili pepper (optional)
  • 2 teaspoon of thyme
  • 390 g of artichoke heart
  • 4 tomatoes
  • 140 g of pasta
  • 120 g of feta
  • 1 teaspoon of lemon juice
  • 1 stalk of fresh basil (optional)
  • 4 teaspoon of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper
