Pattypan Squash and Potato Gratin (Dairy-Free)

A little-known vegetable from the squash family with an artichoke flavor, prepared as a puree with potatoes and gratiné. A delight!

Instructions

  • 1.   Cook the peeled potatoes and pattypan squash in water. Drain them.
  • 2.   Mash the two vegetables together using a potato masher, then add the butter and cream. Mix well. Season with salt, pepper, and a little ground nutmeg.
  • 3.   Place the puree in gratin dishes. Top with breadcrumbs and grated Gruyère cheese, then bake for 10-15 minutes before serving hot.

  • 1 pattypan squash
  • 10 potatoes
  • 60 g of grated sheep cheese
  • 20 g of breadcrumbs
  • 10 cl of cream rice cuisine
  • 1 teaspoon of margarine
  • 1 pinch of nutmeg
  • salt (according to taste)
  • pepper (according to taste)
