Light Carbonara Pasta

Instructions

  • 1.   In a saucepan, bring salted water to a boil. Meanwhile, in a bowl, whisk the egg yolks with a pinch of salt, pepper, and nutmeg. Then add the Parmesan cheese and mix everything together. Keep warm.
  • 2.   Once the water is boiling, plunge the spaghetti into the boiling water. Let them cook for the indicated time until they are al dente. Meanwhile, peel and finely slice the onion. Heat a large non-stick skillet over medium heat with a drizzle of olive oil. Sauté the onion and bacon slices in it for about 5 minutes. Remove the skillet from the heat.
  • 3.   When cooked, drain the spaghetti in a colander and transfer them to shallow plates. Then add the Parmesan/egg mixture and the golden slices of smoked ham from the skillet. Enjoy immediately.

Notes & Suggestions

  • You can replace the bacon bits with smoked poultry bits.
