Stuffed mussels with cheese

Instructions

  • 1.   Remove the garlic cloves and chop them. Finely chop the parsley. Preheat the oven to the broil setting. Heat the white wine in a large pot and add the mussels. Cover and cook for 3 minutes, stirring occasionally until the shells open.
  • 2.   Remove the mussels from the shells and strain the juice. Add the juice to the cancoillotte cheese along with the chopped garlic and parsley. Heat over low heat for 2 minutes.
  • 3.   Discard the top shell of the mussels and place them in a large dish. Spread the cancoillotte sauce over the mussels. Season with pepper. Bake for 3 minutes. Serve immediately, accompanied by a slice of lemon.

Notes & Suggestions

  • Cancoillotte is a melted cheese mainly produced in Franche-Comté, as well as in Lorraine and Luxembourg. It is made from a mixture of metton and water, with butter added at the end of the preparation.
