Instructions

  • 1.   Wash and cut (without peeling) the eggplants, bell pepper, and tomatoes into cubes. Peel and finely chop the onion and garlic.
  • 2.   In the bowl of your Cookeo, add the oil, finely chopped onion, and start the browning mode for 2 minutes. Add the eggplants, tomatoes, garlic, and continue the browning mode for 2 minutes.
  • 3.   Then add the water, bouquet garni, salt, and pepper, and program for 10 minutes on pressure cooking mode.
