Orange Duck with Companion

Instructions

  • 1.   Remove the skin from the duck breasts and cut them into pieces.
  • 2.   Peel the shallot and onion, then roughly chop them. Put them in the robot with the Chopper attachment. Mix at Speed 11 for 10 seconds.
  • 3.   Replace the Chopper with the Mixer attachment. Add olive oil and the duck pieces, then start the Stew Program P1 at 130 °C for 5 minutes.
  • 4.   At the end of the program, bring the preparation to the center. Add the orange juice, port wine, honey, and the cornstarch mixed with the chicken broth, orange slices, and zest. Season with salt, then start the Stew Program P2 at 95 °C for 60 minutes.
  • 5.   Serve with celery puree or rice.
