Basque-style Chicken

Instructions

  • 1.   Chop the onion and garlic.
    Peel and cut the tomatoes into pieces.
    Cut the peppers into strips.
  • 2.   Heat 4 tablespoons of oil in a Dutch oven. Add the onions, garlic, and peppers and cook for 5 minutes.
  • 3.   Add the tomatoes to the Dutch oven, season with salt and pepper. Cover and simmer for 20 minutes.
  • 4.   In a sauté pan, brown the salted and peppered chicken pieces in olive oil.
  • 5.   Once browned, add the chicken to the vegetables, cover, add the bouquet garni and white wine, and cook for 35 minutes.
