Instructions
1. It's best to make it in a mortar, but a large spice blender works just fine
A regular blender is probably too big
2. Grind the pine nuts until you have a paste
Add the garlic
The paste should be fairly smooth
3. Add only the basil leaves (and a pinch of coarse salt if using a mortar, it helps to shred the leaves)
Mix them well into the paste, pre-cutting them helps and do it in batches if necessary.
4. Add the grated Parmesan cheese and mix it in
5. Gradually add the oil, stopping when the oil no longer incorporates (it's usually a little less than 10cl)
